Hash Brown Pizza 5 cups of frozen shredded hash brown potatoes, thawed(30-32 oz. pkg.) 1 can cheddar cheese soup, undiluted 1 egg-beaten 1/2 t. salt 1/4 t. pepper 2 lbs. ground beef 1 medium onion, chopped-optional 4 oz. can mushroom pieces & stems, drained 15 oz. can pizza sauce 16 oz. shredded pizza cheese or 16 oz. mozerella cheese(4 cups) In a bowl, combine the potatoes, soup, egg, salt & pepper. Spread this mixture into a greased 9x13 baking dish. Bake uncoverd at 400 degrees for 25 minutes or until lightly browned. Meanwhile, in a skillet, brown the beef, then drain. Add the onions & mushrooms. Stir in the pizza sauce then cover and place on medium to medium low heat. When potato crust is ready, place 2 cups of cheese over it, then place the meat mixture over that. Finish with remaining 2 cups of cheese. Bake in oven uncovered until all cheese is melted-at least 15 minutes more. Let rest 5 minutes before cutting. |
