Gazpacho

The National Soup of Spain

1 smal clove of garlic, minced
1 1/4 tsp salt
2 whole pimentos sliced
1/4 cup olive oil
1/4 cup fine brad crumbs
2 pounds of fresh, ripe tomatoes
2 Tablespoons red wine vinegar
2 cups of cold tomato juice or ice water
1 green pepper, seeded, chopped
1 red pepper, seeded, chopped
1 cucumber, pared, seeded, chopped
2 bunches gree onions, chopped
2 cups plain toasted croutons.

Mix all together but croutons. Refrigerate and the longer the better. I make a gallon at a time and have it for a few days. I never use the crumbs or the croutons.
