Coconut Snowballs 4 Egg Whites 1/4 teaspoon Salt 2/3 cup Sugar 1 teaspoon Vanilla 1/4 cup all purpose flour 3 cups lightly packed flake Coconut Preheat oven to 325 degrees, coat 2 baking sheets with cooking spray. Beat egg whites until stiff, but no peaks. Beat in salt, sugar, vanilla and flour, then stir in coconut. Drop batter by teaspoons, 1 inch apart, on the greased cookie sheets. Bake for 20 to 25 minutes until lightly brown. Let the sheets cool on the wire racks for 1 minute then remove cookies to the wire racks to cool. Makes 2 dozen. |
