5 CANNED TUNA ideas

For each recipe use one or two 6-ounce cans of the chunk-light variety packed in water; drain, and flake with a fork.

  Spaghetti Puttanesca
In saucepot, cook 12 oz. spaghetti as label directs; drain in colander. In same saucepot, heat 2 cups spicy spaghetti sauce, I can tuna, and ¼ cup salad olives. Add pasta and ½ cup chopped basil; heat through.
Serves 4.

  Tuna Nicoise Crostini
Arrange 18 (1/4 inchthick) diagonal slices baguette on cookie sheet. Toast in preheated 375 oven 6 minutes, until crisp. In bowl, mix 1 can tuna ¾ cup prepared bruschetta topping, 1/3 cup chopped celery, and 1 ½ tablespoons capers. Spoon onto bread.
  Serves 6.

  Tuna & Bean Salad
In bowl, combine 1 can (15 to 19 ounces) rinsed and drained white kidney beans, 1 can tuna, 3 tablespoons chopped dried tomatoes in oil (plus 2 teaspoons of the oil), ¼ cup sliced red onion, 1 teaspoon grated lemon peel, and 2 tablespoon Lemon Juice. Spoon into lettuce cups.
Serves 3.
  Baked Potato Tuna Melt
Prick 4 baking potatoes (6 ounces each); place on microwave – plate. Microwave on high 8 minutes, until tender. In bowl, mix 3 cans tuna, 1/3 cup sour cream, 1.3 cup minced celery, and 1 tablespoon horseradish. Cut 4 thin slices Swiss cheese in half. Cut each potato lengthwise in half; place 4 halves, cut sides up, on same plate. Sprinkle with 1/8 teaspoon salt, spread with half of tuna mixture. Place cheese on each. Microwave on high 1 ½ minutes to heat tuna. Repeat.
Serves 4.
  Tuna Patties
Crush 12 saltine crackers, place1/3 cup in bowl and remaining on plate. Into same bowl, stir 2 cans tuna, 1/3 cup tartar sauce, 3 tablespoons chopped green onions, and 1 ½ teaspoon grated fresh ginger. Shape into 4 patties; coat with crushed crackers, then with nonstick spray. Cook in nonstick skillet on medium 8 minutes.
Serves 4.
