Three Desserts Nutty Crunchy Fruit Candy 1 pound Powdered Sugar 1 package 12oz. Vanilla Wafers, crushed 1 - 6oz. can frozen Orange Juice, thawed 1/2 cup melted butter 1-1/2 cups ground Walnuts In a bowl, combine the first 4 ingredients. Shape into 3/4 inch balls, then roll into walnuts. Place on a cookie sheet-- cover and refrigerate for at least 24 hours, before serving. Store leftovers in an airtight container in the fridge. Yields-- 8 dozen ================================== Marshmallow Popsicles 1 - 12oz. bag Semisweet Chocolate Chips 4-1/2 Teaspoon Oil 40 large Marshmallows 20 Posicle Sticks 1 Cup flaked Coconut 1 cup ground Walnuts or Pecans 3/4 cup colored Sprinkles Combine chocolate chips and oil in a shallow microwave safe bowl, heat until melted. Stir until smooth. Place 2 marshmallows on each popsicle stick. Dip the marshmallow sticks into the melted chocolate--coat. Allow excess to drip off. Roll in to coconut, nuts or sprinkles on all of the above. Place on a wax paper lined baking sheet. Refrigerate until firm. Yield: 20 servings ================================== Six Fruit Salad 2 cups fresh Strawberries, quartered 1 cup cubed Honeydew 1/2 cup fresh Blueberries 1 large Apple, chopped 1 large orange, peeled and quartered (each section) 1 large Banana, sliced 1/2 cup Orange Jucie In a large bowl combine the fruit. Drizzle with the orange juice and stir gently. Serve immediately serves 6 to 8. |
