"PEANUT BUTTER PIE"
1 8 oz. cream cheese
1 cup peanut butter, creamy or crunchy
1 1/2 cups powdered sugar
1 16 oz. tub whipped topping
Cream cream cheese and peanut butter,
add powdered sugar and topping.
Reserve enough topping for top of pie.
Pour into TWO graham cracker crusts,
put reserved topping on and freeze.
( I put the plastic tops of the crusts back on to freeze)
Great to have on hand for surprise guests!

"IMPOSSIBLE PUMPKIN PIE"(GREAT & EASY)
3/4 CUP SUGAR
1 13 OZ CAN MILK
2 EGGS
2 TEAS VANILLA
2 TAB. BUTTER
1/2 CUP BISQUICK
1 16 OZ CAN PUMPKIN (2 LEVEL DRY MEASURE CUPS MINUS A LITTLE)
2 1/2 TEAS. PUMPKIN PIE SPICE
ADD ALL INGREDIENTS INTO BLENDER BLEND WELL.
GREASE 1 LARGE, OR TWO SMALL, PIE PANS.
350 DEGREES FOR 50 TO 55 MINUTES
(OR UNTIL KNIFE IS CLEAN WHEN PUT INTO THE MIDDLE OF THE PIE.

"Zucchini Pie"...Tastes like Apple!!
4 cups zucchini,peel & slice like apple slices.
Parboil in a small amount of water for 10 mins. Drain.
Mix 1 1/2 teasp. cream of tartar,
dash of salt,
dash of nutmeg,
2 Tablesp. flour,
1 Tablesp.Lemon Juice,
1 1/2 cups sugar,
1 1/2 teasp.cinnamon.
Stir.
Pour over drained zucchini & pour into pie shell.Dot with 1 teasp.oleo.
TOPPING:
Mix 1 stick oleo, 1 cup flour, 1/2 cup sugar,
Mix until it's crumbly.
Sprinkle over zucchini..Bake at 375degrees for 45 mins.
No Kidding...this does taste exactly like apple pie. When my dad brought me a piece and didn't tell me i thought it was apple...Then he gave me this recipe. Yummy!

"Pie Crust (60 year old recipe)"
I usually double receipe. Easier to measure. Makes 2 pies or 1 pie, top crust.
1 1/2 cups sifted flour
1/2 teaspoon salt
1/2 cup crisco
3 tablespoons water
Sift flour and salt, add 2/3 of crisco, cut in with two knives till size of marbles.
Then add rest of crisco and cut in till size of peas.
Add water, Mix well with a fork. Form into ball, and proceed usual manner rolling out for crust.
Bake at 325 till golden brown, without filling.
With filling, bake as directed, I usually bake it about an hour for a fruit pie. According to your own oven.
