Nutty Caramel Corn 3 packages plain microwave popcorn 1 cup salted peanuts 1 cup salted roasted almonds 1 cup packed brown sugar 3/4 cup butter 3/4 cup corn syrup 3/4 cup peanut butter 1/2 cup molasses 1 teaspoon vanilla extract 1/2 teaspoon baking soda 1 cup pecan halves Pop popcorn according to directions on package. Meanwhile, in a heavy saucepan, combine the next 7 ingredients. Bring to a boil over medium heat, cook & then stir for 5 minutes. Stir in vanilla & baking soda (mixture will foam). Place the popped popcorn and pecans in a very large bowl. Pour the hot syrup over the popcorn & pecans and toss to coat, then spread on a greased baking sheet with sides (use 2 if needed). Bake at 250 degrees for 1 hour, stir every 15 minutes. Remove from pans onto wax paper to cool. Break into clusters after cooled. Store in airtight containers or plastic bags. Yields 6 quarts. |
