Rascals "Cheese Potato Puffs" 1 cup mashed potatoes 2 beaten eggs 1/2 cup milk 2 cups or 8 oz. shredded cheddar or american cheese 1/2 cup flour 1/4 teaspoon baking powder salt & pepper to taste oil for frying Combine all the ingredients except the oil. In a pan or a deep fat fryer heat oil to 375 degrees. Drop batter by tablespoons, 4 or 5 at a time, into the oil. Fry 3 or 4 minutes or until golden. Serve immediately. Yields about 24 Rascals |
