Peppermint Puffs

2 cups all-purpose flour
1/4 teaspoon salt
1 stick unsalted butter, room temperature
1 cup powdered sugar
1 egg
1/2 teaspoon peppermint extract or flavoring
1/2 teaspoon vanilla extract or flavoring
1 - 8 oz package white chocolate, melted with 1 tablespoon of shortening
1/2 cup finely chopped candy canes

Stir together flour and salt in a medium size bowl. In another bowl, beat butter & sugar until smooth and creamy. Beat in egg. Beat in extracts or flavorings on low speed, add the flour mixture to this.

Shape the dough into a ball, wrap in plastic wrap and refrigerate 1 hour. Heat oven to 375 degrees. Coat baking sheets with pam. Shape the dough into 1 inch balls, place on baking sheets. Bake at 375 degrees for 10 to 12 minutes or until bottoms are lightly browned. Cool on wire racks. When cool, brush with melted white chocolate then dip into crushed candy canes. Let harden on wax paper. Makes 3 dozen cookies....

To avoid a messy countertop, line the counter with wax paper; then set down wire racks.
