Double Duty Breakfast Casserole

In a bowl combine:
24 oz. package frozen Shredded potatoes
2 cups cooked Diced Ham
salt and pepper to taste
1 can Cheddar Cheese Soup
2 soup cans full of Milk
10 eggs

Options:
1/2 cup chopped onion
1/2 cup chopped red and/or green pepper
1/2 cup sliced mushrooms
1/2 cup black olives, diced
1/2 cup green olives, diced

Topping
2 cup shredded Cheddar Cheese

Combine all the above, mix well. Place in a 3 quart casserole dish. Top with 2 cups shredded Cheddar Cheese. Bake at 350 degrees for 45 to 55 minutes or until knife in center of casserole comes out clean.
