CREAMY AVOCADO MOLD

1 1/2 envelopes unflavored gelatin
1 cup cold water
3/4 cup boiling water
2 TBSP lemon juice
1 1/4 tspn salt
1 tspn onion, grated
2 or more dashes Tabasco
2 1/2 cups avocado, mashed, ripe
1 cup sour cream
1 cup mayonnaise

Directions
Soften gelatin in cold water; dissolve in boiling water. Add lemon juice, salt, onion and Tabasco. Let cool to room temperature. Stir in avocado, sour cream and mayonnaise. Pour into a 6-cup ring mold. Chill until firm (5 to 6 hours or overnight).

NOTE: We usually fill the center of the ring mold with shrimp to dip into the avocado mold.
