Hawaiian Tuna Salad

1 can (9 oz) tuna, drained
1 can pineapple chunks, drained
1/2 C chopped green pepper
1/2 C shredded carrots
1/3 C mayo
Combine ingredients with 1/4 tsp salt & 1/8 tsp pepper. Add 3/4 tsp ground ginger if desired. Mix well.

Let stand for about 1 hr for flavors to meld.

Serve on hard rolls or inside a wedged tomato.
