Frittata

Ingredients:

12 eggs
1 Cup Milk
2 Tbl. flour
1 tsp. Salt
1 Lb. bacon
1 Large Onion diced
1/4 Lb. Cheddar Cheese
1/4 tsp Cayenne Pepper
1 tsp Chili Powder
Fresh Oregano
Fresh Chives

Cooking Instructions:

Cut the bacon into bite size pieces and brown in skillet. Grease a 10" by 13" baking dish and line bottom with bacon. Spread diced onions on bacon. Cut cheese into 1/2" cubes and spread over onions. Beat eggs, milk, flour salt, cayenne and chili powder and pour into baking dish. Top with oregano leaves and chopped chives. Bake at 350 for 30 minutes until firm.

Serves 6. Six Hundred (600) calories per serving
