Zucchini Chocolate Cake
125g (4 ozs) Margarine
1 cup brown sugar
1/2 Cup white sugar
3 eggs
2 1/2 cups flour
1 tsp vanilla
1/2 cup yoghurt
1/4 cup cocoa
2 tsps baking soda
1 tsp cinnamon
2 tsps Mixed spice
1/2 tsp salt
3 cups (350g - 11ozs) grated zucchini, moisture squeezed out
1 cup small pieces of chocolate

Prepare a 25cm (10") square pan by lining it with two crosswise sheets of baking paper.
Beat the Margarine with the sugars until light and creamy. Do not hurry this step. Use a mixer. Add the eggs one at a time, with a teaspoonful of the measured flour to prevent the mixture curdling. Add the Vanilla and yoghurt and mix well.
Sift the dry ingredients together. Stir in with the grated zucchini. Turn into the prepared pan. Sprinkle surface with the small pieces of chocolate.
Bake at 180C (350F) for 45 - 60 minutes, or until centre feels firm and a skewer comes out clean.
