COCA-COLA CAKE

2 c. flour
2 c. sugar
2 sticks butter
1 c. Coca-Cola
3 Tbsp. cocoa
1/2 c. buttermilk
2 eggs, beaten
1 tsp. baking soda
1 tsp. vanilla
2 c. miniature marshmallows

Combine flour and sugar, mixing well. Heat butter, Coca-Cola and cocoa and bring to boiling point. Pour over flour and sugar. Add buttermilk, eggs, baking soda and vanil la. Mix well. Then add miniature marshmallows and pour into a 9 x 13-inch greased cake pan.

Bake for 30 to 35 minutes in 350 degrees oven.

Marshmallows will rise to top during baking. Allow to cool and frost with Coca-Cola Cake Icing.



Coca-Cola Cake Icing:

1 stick butter
6 Tbsp. Coca-Cola
1 box powdered sugar
1 tsp. vanilla
3 Tbsp. cocoa
1 c. toasted pecans or almonds or both

Cream butter. Add remaining ingredients and beat well. Pour over cake while still in pan. This cake will keep for days if left in the pan in which it was cooked.
