Crockpot Meatball Stew

Makes: 6 servings

1 lb lean ground beef
1 egg
1/2 tsp salt
2 Tbsp butter
1 cup water
1/4 Tbsp garlic powder
2 tsp Italian seasoning
3 potatoes, peeled & diced
2 Tbsp cornstarch
1 chopped onion
1 cup dry bread crumbs
1/4 tsp pepper
16 oz whole tomatoes, chopped
2 Tbsp beef bouillon granules
1/2 tsp seasoned salt
4 carrots, pared & sliced
1/4 cup cold water
3/4 tsp Liquid Smoke (optional)

Combine beef with onion, egg, bread crumbs, salt & pepper, & Liquid Smoke. Shape mix into abt 24 meatballs; brown in pan with butter; drain well. Mix tomatoes, water, beef granules & seasonings; set aside. Place carrots & potatoes in bottom of crockpot; top with meatballs. Pour tomato mix over all; cover; cook on Lo for 8-10 hrs.

Before serving, remove balls with a slotted spoon; temporarily place in a bowl; cover with foil to keep warm. In a separate bowl, make a smooth paste of cornstarch & water; stir into veggies. Cover; cook on Hi for 10 min to thicken. Add meatballs back to stew & serve.

Prep Note: ~ This is pretty much a 'basic' meatball that goes with LOTS of things. As long as you're doing it and got all the 'gooodies' out and going....make up a BIG batch of 'em; then once they're cooked, drained, & cooled...freeze the 'leftovers' for yet another day.
